Guar gum – the E412 nutritional supplement entering into group of thickeners, stabilizers and emulsifiers.
Guar gum represents small powder of white color, well soluble in water, the slowing - down ice crystallization process.
It is considered one of the best stabilizers increasing viscosity of products. On a chemical structure of E412 it is similar to carob tree gum , has property to form the structured gel and it is steady against cycles frosts defrosting. Methyl cellulose , etc. , improving a consistence is compatible to the majority of other vegetable hydrocolloids, such as an agar , pectin , karraginan , such combinations can exert mutually positive impact.
The main property of a guar – ability to absorb water and to form viscous solution. Gum of a guar by eight times surpasses corn starch in this indicator. Very small amount of E412 additive needs to be used for creation of considerable viscosity of solution.
Guar gum contains in beans of a guar (the Indian acacia). Beans of a guar grow mainly in Africa, India, Australia, Pakistan and the USA. Guar gum – the natural product made from pods by an extraction method from seeds.
E412 additive promotes removal from a human body of harmful bacteria, heavy metals and toxins, is anticoagulant. Has property to reduce appetite, reduces cholesterol level in blood.
