Locust Bean Gum (LBG), E410
Locust Bean Gum, E410 (Carob gum) – a textural ingredient obtained from the fruit seeds of carob tree.
LBG imparts smooth flow properties, freeze- thaw stability and appropriate thickening to a wide range of products. It also improves gel strength when used in combination with K-Carrageenan and Xanthan gum.
LBG dissolves completely above 75 C.
Usage level : 0.1 – 0.9 %
LBG can used as thickening and stabilizing agent in the following products:
